
Mushroom soup like in IKEA
Description
Of course, the result won't be exactly the same as at IKEA, since they use flavor enhancers, emulsifiers, and preservatives. The closest version I've made was using a strong broth from a "Maggi" mushroom bouillon cube poured over instant mashed potatoes—this came almost 100% close, but such soup isn't very nutritious. To make our version more similar, let's add a pinch of dried mushrooms to the soup. Serve the soup with croutons or bread. The soup is ready to serve.

Prepare all the ingredients.

Peel the potatoes, wash, and dry them. Cut the potatoes into medium pieces. Transfer the potatoes to a pot, cover with water, and boil for 20 minutes.

Peel the onion, rinse and dry it, then cut into small cubes.

Rinse the mushrooms and dry them, then cut into small pieces.

In a frying pan, heat the butter and vegetable oil, add the onion and mushrooms, and fry the ingredients for 3-4 minutes until golden brown.

Transfer the mushrooms from the skillet to the pot, add a pinch of dried ground mushrooms, salt and pepper, and dried garlic. Cook the soup for another 10 minutes.

Then blend all the ingredients with an immersion blender. Add the cream to the soup, simmer for a couple of minutes, taste, adjust the seasoning, and serve.
