
Mushroom salad with eggplants
Description
You can prepare an eggplant salad that tastes like mushrooms in no time at all. Simple, quick, budget-friendly, and most importantly — delicious! Serve this appetizer as a side dish or on its own. The flavor really does resemble mushrooms, though it's unlikely anyone would guess right away that it's actually eggplants. You can cut the eggplants into any shape you like: strips, cubes, rounds, etc. The firm flesh of eggplants truly resembles tender little mushrooms, and just wait until you smell the wonderful aroma!

Prepare all the ingredients. Use one large eggplant or two smaller ones.

Cut the eggplant into small julienne strips.

Beat the egg separately.

Combine the egg and eggplants. Mix well and refrigerate for 30 minutes.

In a skillet, heat the oil, add the onion cut into cubes or half-rings, and sauté until soft.
