Mushroom cappuccino

Description

Hearty and aromatic soup. Even children won't refuse this creamy mushroom soup—they'll happily have seconds if you offer. Serve the soup with croutons, toast, or garlic bread. Prepare the soup just before serving; do not make it in advance, as it may separate.

    Prepare the listed ingredients. Peel the onion and rinse it together with the mushrooms under water.

    Finely chop the onion. Heat vegetable oil in a cauldron or saucepan and add the chopped onion. Fry for about 3-4 minutes until golden and soft, without adding mushrooms.

    Wash the mushrooms, cut them in half, then slice them.

    As soon as the onion slices become soft, add the mushroom slices to the container as well.

    Season with salt and simmer for about 10–12 minutes, until all the liquid has evaporated. Sauté the mushrooms for about 1–2 minutes until golden brown. Then season with pepper, pour in the cream, and heat until just boiling. Set aside a small portion of the mushrooms on a plate to use for garnishing the dish.

    Transfer the mixture to a deep container and puree with an immersion blender. If the mixture turns out too thick, add a little boiling water to it.

    Pour the puréed soup into bowls, garnish with reserved fried mushrooms and fresh herbs, and serve warm.
