
Mushroom solyanka without cabbage
Description
The recipe won't take much time. Here is a simple recipe for mushroom solyanka without cabbage. The soup base consists of two types of mushrooms: button mushrooms and dried mushrooms (which should be soaked beforehand). In taste, the soup resembles a traditional mushroom soup, but with the distinctive flavor of solyanka (thanks to mushroom brine). Good luck!

Peel the potatoes, slice them, and place in a saucepan. Add the peeled onion and peppercorns. Cook until done.

Pour boiling water over dried mushrooms and let steep for 30 minutes.

Rinse the mushrooms, slice them, and sauté in vegetable oil for 10 minutes until golden brown.

Remove the dried mushrooms from the brine. Keep the brine.

Sauté the dried mushrooms with the button mushrooms a little longer.

Pour the mushroom brine (through a sieve) into the half-cooked potatoes.
