
Mushroom noodles from dried mushrooms
Description
The soup is simple and quick to prepare. Here is a classic recipe for mushroom noodle soup made with dried mushrooms. Mushroom noodles + homemade noodles + a few vegetable ingredients = a wonderful, flavorful soup. In our tradition, this soup is served in clay bowls, though regular bowls work just as well. Enjoy! Rinse and soak the mushrooms in water for 30 minutes.

Finely chop the onion.

Grate the carrot on a grater.

Sauté the onion and carrots in vegetable oil until soft.

Slice the prepared mushrooms into thin strips. Do not discard the water.

Transfer the mushrooms to a pot and pour over the water they were soaked in. Boil for 10 minutes.

Add the homemade noodles and cook for another 10 minutes.

Add the sautéed carrots and onions, cook for another 5 minutes. Salt to taste.

Finely chop the herbs.
