
Mushroom broth (soup with mushrooms)
Description
The soup is simple and quick to prepare. This easy-to-make soup will delight everyone with its incredibly appetizing aroma! Two types of mushrooms, nutmeg, and a pepper blend make it very tasty. According to the recipe, sour cream should be added at the end of cooking, but you can add it when serving or omit it altogether to keep the soup meatless. You can use not only dill but also parsley, cilantro, or basil—each will make it delicious.

1. Pour warm boiled water over dried white mushrooms and let them soak for 15 minutes. Then cut the button mushrooms into large pieces.

2. Cut the carrots into rounds, then slice them in half. Finely chop the onion. Cut the potatoes into 0.7 cm cubes. Finely chop the herbs.

3. Sauté carrots and onions in vegetable and butter until the onions become translucent. Then add the mushrooms, mix well and sauté until golden brown.

4. Next, add the white mushrooms, potatoes, and pre-boiled beans. Add the required amount of boiling water, mix well, and let it simmer for 10 minutes.

5. Add pepper, nutmeg, mixed peppers, bay leaf, and salt, then mix. Next, add the herbs and cook for another half minute. You can add sour cream either at the end of cooking the soup or directly when serving.
