
Buckwheat soup with mushrooms
Description
You can prepare the soup either in a fasting version, using water, or in any broth—chicken or meat. You can substitute the mushrooms with other types of mushrooms. In general, the combination of buckwheat and mushrooms always yields excellent results. You can be sure—the soup turns out superb. Serve the soup hot.

Prepare the ingredients.

Peel the carrots and onion. Dice the onion, grate the carrots on a medium grater.

Wash and dry the mushrooms, then slice them.

Peel and wash the potatoes, then cut them into small cubes.

Transfer the potatoes to a saucepan, pour in hot water, add buckwheat, and cook for 20 minutes.

Heat the oil in a skillet, add the onion, carrots, and mushrooms, and sauté for 5 minutes. When the potatoes and buckwheat are cooked, add the sautéed vegetables to the soup. Cook the soup for another 12 minutes.

Add salt and pepper, simmer for a couple of minutes, and serve.
