
Buckwheat soup with chicken
Description
A hearty first course. You can use chicken broth or water for cooking. The soup can be garnished with fried onions and carrots, or you can use only boiled vegetables. Serve it with fresh herbs (parsley, dill, celery). Instead of chicken, you can use turkey, pork, or beef.

Pour 2 tablespoons of vegetable oil into a saucepan, add washed buckwheat, and sauté for several minutes. Then pour in water, bring to a boil, and cook for 15 minutes.

Peel the carrots and cut them into small pieces, wash the celery, peel the onion and chop it into pieces.

Pour 0.5 cup of broth into a saucepan, add the prepared vegetables, and simmer over low heat for 10 minutes with the lid closed.

Pour the remaining broth over the vegetables, add pieces of chicken breast and buckwheat, and bring the mixture to a boil.

Season with salt and pepper to taste, simmer for a few minutes, then turn off the heat.

Wash and finely chop the parsley, pour the soup into bowls, and garnish with parsley.
