
Buckwheat soup with potato dumplings

Step 1

First, prepare the dumpling dough. Wash the potatoes, peel them, and boil in salted water. Mash the potatoes into a puree. Mix the puree with the egg and flour.

Wash the mushrooms and slice them into pieces. Dry roast the buckwheat in a skillet without oil.

Peel the carrots and onion. Wash the carrots, grate them. Finely chop the onion. Start frying the mushrooms in a frying pan until lightly browned. Then add the onion and carrots. Mix and fry for a couple of minutes.

Bring the broth to a boil, add the sautéed mixture to it. Salt to taste.

Reduce the heat and simmer the broth for 10 minutes. Then add the buckwheat.

Boil the soup for 2 minutes. Now take a tablespoon of the potato mixture and drop it into the soup to form dumplings.

As soon as the dumplings float to the surface, add the minced garlic and herbs to the soup. Cook for another 4 minutes.

Leave the soup off the heat, covered, for 10 minutes.
