
Greek lentil soup

A hearty first course. Greek lentil soup is very simple and quick to prepare. You can use any type of lentils, but keep in mind that yellow and red lentils cook faster than other varieties. Tomato juice can be substituted with chopped tomatoes or tomato paste. The soup turns out thick, filling, and delicious. Ladle into bowls and serve.

Prepare the ingredients for making the soup.

Peel and wash the onion and carrot. Finely chop and place in a frying pan with vegetable oil.

Fry the vegetables until the onion becomes translucent.

Pour the broth into a saucepan and add the onion and carrots. Cook for 5-6 minutes.
