Description

Minimum effort — excellent result. Salmon, or Atlantic salmon, is a delicate, "refined" fish. It doesn't tolerate large amounts of fat, an abundance of spices, or prolonged cooking. The tastiest salmon is lightly pan-seared or slightly grilled. Salmon with fresh vegetables, fragrant olive oil, tangy feta cheese, and olives makes a perfect base for a snack, a light lunch, or even a romantic dinner. Moreover, this Greek salmon salad recipe can become a highlight of a festive gathering among friends or a family meal! :) Can be served immediately.

    Separate the salmon flesh from the skin and remove the bones. Cut into portion-sized pieces, season with salt and pepper. Sear on a grill or in a pan with a small amount of oil for 3-4 minutes on each side.

    While the salmon is cooling, wash and dry the vegetables (don't forget the herbs!). Slice the cucumbers.

    Remove the stem from the pepper and clean out the seeds. Cut the pepper into thin strips.

    Squeeze the juice from the lemon.

    Place vegetables and herbs into a salad bowl. Add pitted olives. Season with salt and pepper, add oregano. Dress with oil and mix well. Divide the salad among individual plates, top with pieces of salmon, and drizzle with lemon juice.
