Greek salad with mozzarella
Description
A simple dish to prepare. Of course, in Greece this salad is made only with feta—the traditional brined cheese that pairs perfectly with vegetables and olives. But that's in Greece, where, as we know, everything is available. What about here, in Russia? Buying authentic feta is not easy... Genuine feta is produced only in Greece and exclusively from sheep's milk. Similarly, real mozzarella comes only from Italy and only from buffalo milk. Buying either outside major metropolitan areas is nearly impossible. However, our stores do offer many products labeled "feta" and "mozzarella," though these cheeses are actually made from cow's milk. Both are brined and lightly aged. The difference lies in texture: "feta" is softer and richer, while "mozzarella" is firmer and springier. Honestly, the difference isn't that great! That's why I believe a Greek salad recipe using mozzarella is perfectly acceptable. So if you don't have feta on hand, go ahead and use mozzarella—it will still taste delicious ;) Serve chilled.
