Greek salad with feta
Description
The recipe won't take much time. Feta is a traditional Greek brined cheese with high fat content (from 30 to 60%). It has a soft, delicate texture and a rich, milky flavor. Feta is made from both sheep's and cow's milk, although the first option is considered more "authentic." Feta is aged in brine for at least 3 months, but in practice, it can be stored almost indefinitely—cheese that has absorbed too much salt is simply soaked in water or milk before use. Feta is one of the main components of Greek salad. Of course, you can prepare the salad with brine cheese or Adyghe cheese—they are fairly close relatives of feta—but Greeks would not approve of such liberties. The classic Greek salad recipe with feta is guarded in this country as strictly as art and architectural monuments. So let's make the salad the Greek way—with feta and only feta. Serve at the table.
