
Greek salad without pepper
Description
Minimum effort — excellent result. In Greece, where this salad is called Horiatiki, meaning "Village" salad, its traditional ingredients are tomatoes, cucumbers, onions (specifically shallots, not regular onions), olives, and, of course, feta cheese. As you can see, sweet peppers are absent from this list. So preparing a Greek salad without peppers is perfectly in line with tradition. However, one thing you absolutely cannot do without is fragrant extra virgin olive oil—preferably Greek, though any good quality will do. Combined with lemon juice, fresh vegetables, and spices, it's pure delight! :) You can serve it immediately.

Slice the onion into half-rings. If it's too bitter, pour boiling water over it.

Coarsely chop the cucumbers.

And tomatoes.

Take the olives out of the jar and crush each one with the flat side of a knife. Remove the pits.

Wash, dry, and chop the herbs. If using lettuce leaves, tear them by hand.

Squeeze the juice from the lemon.

Combine all ingredients in a deep bowl or salad bowl. Add salt, pepper, and oregano. Drizzle with lemon juice and oil, then mix well. Serve immediately!
