
Pea soup with rabbit
Description
A hearty first course. Rabbit soups are considered dietary dishes. This dish is suitable both for adults and for any children's menu. If you or your loved ones follow a special diet, add all the vegetables to the soup raw; otherwise, the preparation remains the same. Serve hot, ladled into bowls.

Prepare all the ingredients.

Rinse the rabbit and place it in a pot. Add water, bay leaf, peppercorns, salt to taste, carrot cut into pieces, and one onion. Simmer the broth over low heat until the meat is fully cooked.

Meanwhile, rinse the peas and soak them in water.

Strain the finished broth, separate the meat from the bones, and return it to the pot. Place the pot on the stove, add the peas, and bring the broth back to a boil.
