
Pea soup with smoked ribs

1. Prepare the ingredients for the soup. Smoked pork ribs are most commonly available for purchase, and that's what I'll be using to cook the soup. Let's get started.

2. Sort the peas very carefully and rinse them until the water runs clear and transparent. Cover with cold water, add a little salt, and bring to a boil. Cook for about 1 hour, or until the peas are fully tender. Test them as you go—different pea varieties require different cooking times.

3. Prepare the vegetables for cooking: wash, peel, and chop.

4. The ribs also need to be cut. Look carefully at how the ribs are arranged, and try to cut exactly in the middle, where there is no bone.

5. When the peas are ready, add onion, carrot, potatoes, and smoked ribs to the pot. Adjust the seasoning with salt, add a pinch of black ground pepper and a bay leaf. Cook for 30 minutes.
