
Pea soup with turkey
Description
Perfect for lunch. Pea soup is a simple dish that doesn't require special culinary skills. Just keep in mind that when the peas start to boil, they react very vigorously. Therefore, do not cover the pot with a lid right away. There will be a lot of foam from the peas. Reduce the heat to minimum and gradually skim off the foam. Then cover the pot with a lid and continue cooking the soup. Serve with fresh herbs and sour cream.

Prepare the ingredients for making pea soup.

Wash the turkey and place it in a pot.

Pour in the water and place the pot on the stove.

Bring to a boil, reduce the heat to a minimum, skim off the foam, and cook the turkey for 1.5–2 hours until done.

Wash the peas thoroughly in advance and cover them with cold boiled water. Let them soak for 8–10 hours, or preferably overnight.

Strain the ready turkey broth and add the soaked peas to it. Bring to a boil and skim off the foam, which will be abundant. Cook the soup until the peas are almost done.

Peel and wash the carrots and onion. Finely chop the onion and grate the carrots. Place in a frying pan with sunflower oil.

Sauté the vegetables in a pan for 7-8 minutes. Do not overcook or brown them too much.

Then add to the pot with the peas.

Peel, wash, and slice the potatoes. Add them to the soup as well.
