
Pea soup with garlic Quick
Description
Hearty and aromatic soup. A relatively quick way to prepare pea soup. Soak the peas in advance, then put them to boil, adding salt, spices, and bay leaf to the water. Sauté onion and carrot in a frying pan. When the peas become soft, after about 40 minutes of cooking, remove the bay leaf and add the sautéed vegetables. Cook for another 10 minutes. Then add minced garlic and fresh herbs, stir, and remove from heat. Let it steep for a while before serving.

Chop the onion and grate the carrot.

Sauté the onion and carrot in a pan until soft.

Place the pre-soaked peas in a pot, cover with water, add salt, spices, and bay leaf. Bring to a boil, reduce the heat, and skim off the foam occasionally.

After about 40 minutes, remove the bay leaf and add the vegetables from the frying pan. Simmer for another 10 minutes. Then add the minced garlic and herbs, stir, and remove from heat. Let the soup sit for about 5 minutes before serving.
