
Pea soup on meat broth
Description
Perfect for lunch. I don't like soaking split peas. The pea flavor is lost. Let the soup take longer to cook, but it will taste better.

Prepare the ingredients.

Pour three liters of water over the meat. Bring to a boil, skim off the foam, and add the whole onion. Do not add salt. Simmer the broth until the meat is cooked.

Strain the broth and cut the meat into pieces, removing the bones.

Bring the broth to a boil, add dried celery root and split peas. Cook, skimming off the foam, until the peas are tender—about an hour.

Meanwhile, sauté the chopped onion and grated carrot in a skillet until golden.

Place the sautéed vegetables into the soup, add the sliced meat, season with salt and pepper to taste. Add bay leaf and thyme. Cook the soup for another 3 minutes. Let it steep, covered, for another 10 minutes.

Serve the soup hot. Spicy croutons will be a great addition to this soup.
