
Pea soup on beef broth
Description
I really like this simple recipe for pea soup made with beef broth. If you pre-cook the peas, removing all the foam, there will be no unpleasant side effects that sometimes occur with legumes! The result is a delicious and hearty soup—give it a try. The soup is ready to serve.

1. In a separate pot, prepare the broth. Rinse the bone-in meat, cover with cold water, and place over low heat. Add salt and one peeled onion.

2. Meanwhile, start cooking the peas that have been soaked overnight. Simmer, skimming off the foam from both the meat and the peas. Once the peas are cooked, blend them with a mixer and add to the meat.

3. Finely chop the remaining onion and sauté it together with the grated carrots. Transfer to the pot along with the remaining oil. Simmer over low heat for another 20 minutes.

4. Remove the meat, cut it into cubes, and return it to the pot. The soup is ready!
