Description
Hearty and aromatic soup. The classic pea soup recipe is very simple. It's important to remember that for the soup to be especially delicious, the peas should be soaked in cold water for 1-2 hours; this will result in a flavorful broth with a rich aroma when boiled. To add a piquant flavor, garlic is added to the soup—it really pairs wonderfully with peas. You can also add smoked meats, but I prefer using fresh pork or beef; it's healthier and, in my opinion, tastier. Next, I'll explain in detail. The soup is ready to serve.

Prepare all the necessary ingredients.

Rinse the peas, then cover with cold water and let soak for 1–2 hours. Change the water 2–3 times during this period. After that, place the peas together with the meat into a saucepan with boiling water (I use a 4-liter pot), add finely chopped garlic and salt, and cook for 1 hour.

Finely chop the potatoes and add them to the soup. Cook for 30 minutes, until the potatoes are well cooked.

Sauté the onion and carrots in butter and add to the soup. If needed, add a little more salt, and if desired, add bay leaf and other spices.
