
Pea soup for children
Description
For children, it's best to cook pea soup using fresh young peas and other seasonal vegetables—the taste and color of such soup will be delightfully spring-like, bright, and cheerful! First, sort the peas, rinse the pods, and shell the peas. Peel the potatoes, carrots, and onion. Cut the potatoes into small cubes and grate the carrots. Bring water to a boil, add salt, then add the potatoes and one whole onion. After about 5 minutes, add the peas and carrots. Meanwhile, heat the milk until boiling. Check the peas for doneness—they cook very quickly! Once the peas are tender, remove the onion and blend the soup with a blender or other convenient tool until smooth (reserve a few peas with a slotted spoon to garnish the soup—kids will love it!). Stir the boiled milk into the soup, mix well, and heat through. This delicious soup is perfect served with sour cream and croutons. You can also sprinkle it with fresh herbs if your children enjoy them. The soup is ready to serve.
