
Pea puree soup with ham
Description
Hearty and aromatic soup. Pea soup is a filling and nutritious dish, as peas contain more protein than beef. In addition, peas are a rich source of vitamins, minerals, and antioxidants. Pea-based dishes are the most wholesome and healthy food any time of the year. Ladle into bowls and serve.

Peel, rinse, and dice all the vegetables. Rinse the peas.

Melt the butter over medium heat in a large saucepan or Dutch oven. Add the onion, carrots, and celery, season with salt, and sauté for 7–10 minutes, until the onion becomes translucent and soft.

Add turmeric, broth, peas, potatoes, and roughly chopped ham, bring the soup to a boil, then simmer covered over low heat for 1 hour.

Remove the ham from the pot and blend the soup in a blender until smooth. I blend it just enough so that pea pieces are still noticeable, not a completely smooth puree.

Now season the soup with spices and heat it once again.

Serve the pea soup hot, adding finely chopped ham, croutons, and chopped parsley to each portion. Serve mustard on the side.
