Pea soup puree with bacon and potatoes

Description

Many remember peas from school or kindergarten, and those memories aren't the most pleasant. Don't underestimate this delicious ingredient—you can make a very tasty and simple soup from it. Thanks to its creamy consistency, the other vegetables are not visible, and you only experience a soft, creamy flavor with a hint of smokiness from the bacon. Serve with fresh herbs and sour cream.

    1. Cut the bacon into cubes of 2-2.5 cm.

    2. Peel and chop the onion, finely chop the garlic.

    3. Place the bacon in a pot and cook over medium heat until it turns brown and crispy. Set aside a quarter of the fried bacon.

    4. Add onion and garlic to the remaining bacon in the pot, cook, stirring occasionally, until the onion becomes soft and translucent.

    5. Add dried peas to the saucepan.

    6. Pour in the broth, add the bay leaf and ground pepper to taste.

    7. Peel the potatoes and cut them into cubes of 2-2.5 cm.

    8. When the soup heats up, add the potatoes, increase the heat and bring to a boil, then reduce the heat, cover with a lid, and cook for 45 minutes.

    9. After 45 minutes, check the soup: the peas should be soft. Remove the soup from heat and take out the bay leaf. Let it cool slightly, then blend everything in a blender either all at once or in batches. Pour the pureed soup back into the pot, season with salt and pepper to taste.
