
Classic gazpacho

Prepare the necessary ingredients.

Take slices of stale bread and cut off the crusts. Cut the crusts and part of the bread into cubes, then fry them for several minutes on a dry hot skillet.

Make a cross cut on the tomatoes and dip them in boiling water for a couple of minutes. Peel them, then slice the tomatoes into large pieces. Peel the pepper, onion, and garlic, and slice them as well. Place all the vegetables into a blender, add bread slices, lemon juice, and salt to taste. Blend until smooth. Let the mixture sit for a while before serving.

For serving, cut the cucumbers into small cubes.

Add olive oil at the very end to preserve the bright red color, then mix. Pour the soup into individual serving bowls, and top with chopped cucumber, croutons, and fresh basil.
