Prepare all the ingredients.

Wash the cucumbers and peel off the skin. Peel the avocado and remove the pit. Separate the mint leaves from the stems. Wash the arugula and dry it.

Pulse arugula, mint, cucumbers, and avocado together with olive oil until smooth. Add lemon juice, salt, and black pepper to taste.

For serving the soup, finely chop the radish.

Pour the soup into a bowl. Place the radish in the center and drizzle with olive oil.
