Gazpacho
Description
A hearty first course. Gazpacho is a Spanish soup that is perfect for hot summer days. There are many variations of this dish around the world, but this recipe follows classical traditions. Gazpacho is usually served with a grilled slice of white bread, rubbed with garlic and drizzled with olive oil. The soup is ready to serve.

Step 1

1. Prepare all the vegetables for gazpacho, wash and remove stems, peels, and stems.
- 2
Step 2

2. I suggest removing the skin from the tomatoes. To do this, cut out the stem, make a cross-shaped incision at the top, and immerse them in boiling water for a couple of minutes. The skin will peel off easily. Finely chop the tomatoes.

Step 3

3. Continue cutting. Slice all the vegetables that have been peeled from tough skin (if any).

Step 4

4. Place everything in a blender and blend. Then add the spices and olive oil, and blend a few more times.

Step 5

5. Add tomato juice, spices, and olive oil to the vegetables, and mix well. Chill the gazpacho in the refrigerator or serve in a bowl with ice cubes. By the way, gazpacho can be served creatively— in a glass or a small jar. Garnish servings with fresh herbs. Gazpacho is ready!
