
Frankfurter vegetable soup
Description
The recipe won't take much time. Frankfurt vegetable soup, like most other dishes of German cuisine, is simple and straightforward to prepare. In my opinion, bacon plays an important role here—without it, the soup would be rather bland and boring. But with bacon, it turns out light yet sufficiently rich in flavor. You can also cook it in plain water instead of beef broth—then it becomes even lighter. In short, improvisation is welcome :) Good luck!

We peel the carrots and parsley root and chop them finely—as for a regular soup.

Next, cut the kohlrabi into small cubes.

Thinly slice the leek into rings.

Separate the cauliflower into florets.

Finely chop the smoked bacon and fry it in vegetable oil until golden brown—just a couple of minutes. It's best to fry it not in a frying pan, but directly in the pot where the soup will be cooked.

Add the leek to the bacon and sauté for another minute.

Now add parsley root and carrots, mix and sauté for another 2 minutes.

Now add kohlrabi and celery. Mix and sauté together for 3-4 minutes.

Now add the cauliflower, green beans, and peas. I used frozen ones. Mix well and sauté for 2-3 minutes.

Transfer all the vegetables to a saucepan, pour in the broth. Add salt, thyme, pepper, and garlic. Bring to a boil, then reduce the heat and simmer for another 20 minutes uncovered. Done!
