
French Lentil Soup
Description
Soup is a traditional first course for lunch. Serve it hot, preferably right after cooking. The soup is light and eaten quickly, but it's thick, so it's filling. It's made with vegetable or meat broth and bacon, making it aromatic and delicious. The soup is ready to serve.

1. Cut the bacon into small cubes. Place a pot over heat and add the bacon.

2. Fry the bacon for a few minutes to render the fat.

3. Slice the onion and add it to the bacon, sauté for 7-10 minutes, then add the minced garlic and cook for another minute.

4. Peel the celery root and cut it into small cubes. Slice the carrots and leek into rounds or half-rings. Add the vegetables to a saucepan, mix well and cook for 4-5 minutes.

5. Rinse the lentils and add them to the vegetables in the pot, sauté for 1-2 minutes.

6. Pour the broth into the pot, add vinegar, thyme, bay leaf, salt, and pepper to taste. Bring to a boil, then simmer over low heat for half an hour.
