
French Fish Soup
Description
Perfect for lunch. This incredibly aromatic and hearty French soup will delight you and your family. It turns out not only very tasty but also healthy, as sea fish and seafood contain iodine. The soup takes 1–1.5 hours to prepare, but the result is worth it. Serve with fresh herbs and sour cream.

Prepare the necessary ingredients.

Rinse the small shrimp in water and place them in a pot. Prepare the sea fish: cut off the heads and tails, remove the innards, and thoroughly rinse inside and out. Place the fish together with the heads and tails into a container.

If you need to scale the fish, do it under water to prevent the scales from scattering everywhere.

Pour in hot water and place the container on the stove. Boil everything for about 40–50 minutes over medium heat from the moment it starts boiling, so that the broth fully absorbs all the flavors and aromas of the fish and shrimp.

Remove the large pieces of fish from the finished broth, placing them into another container.

Strain the broth through a sieve, discard the residue - it will no longer be needed.

Pour the rich fish broth into another saucepan, place it on the stove, and bring the contents to a boil.

Thoroughly rinse the large shrimp and mussels, then place them in the broth.

Peel the onion and garlic, chop finely, and sauté in vegetable oil for 2-3 minutes.

Wash the tomato and finely chop it, place it in a pan and simmer for about 3-4 minutes. If desired, you can add a little white wine—50 ml—at this stage.

Place the sautéed mixture in a saucepan and boil for 2-3 minutes. If the shrimp and mussels were not purchased frozen, boil for 5-8 minutes.

Salt and pepper to taste. Finely chop the washed green onion stems or other greens, add to the soup, simmer for a minute, then turn off the heat.

Taste the dish and adjust seasoning if necessary.

Place the pieces of boiled fish, mussels, and shrimp into deep plates, pour over the broth, and serve.
