To prepare authentic classic Vietnamese pho bo soup, first make the broth. For this, use beef with bones and beef tenderloin. Broth made with bones turns out rich, aromatic, and flavorful. In addition to the boiled meat, thin slices of raw beef are added to the soup. Therefore, tenderloin or flank steak is best suited for this purpose.

Trim the tenderloin of excess fat and connective tissue. This meat will not be cooked. To make it easier to slice thinly, freeze it slightly in the freezer.

Place the remaining meat in a pot, cover with water, and bring to a boil. As it boils, remove the foam that forms on the surface. Simmer the broth over low heat for 2 hours.

To give the broth a beautiful golden color, cut an onion in half and fry it well in a hot dry skillet. To enhance the flavor and aroma of the broth, add the onion, red chili pepper, star anise, cloves, a piece of cinnamon, coriander stems, and ginger. Simmer the broth for another 30 minutes. Adjust the taste of the broth with sugar and salt.

Once the broth is ready, remove the meat from it and separate it from the bones. Strain the broth through a sieve and remove all spices and herbs. Skim off excess fat from the broth.
