
Finnish Fish Soup

Step 1

Prepare the salmon. Place the head (with gills and eyes removed), tail, skin, and bones into a pot, cover with clean cold water (!), bring to a boil, then reduce the heat and skim off the foam. Add whole peeled carrots, onion, bay leaf, and peppercorns, and simmer gently for about 25–30 minutes.

Strain the broth and add 2 teaspoons of salt.

While the broth is cooking, prepare the sauté. Heat a frying pan, pour in vegetable oil, and sauté finely chopped onion until translucent. Then add carrot, grated on a fine grater, and fry everything until soft.

Add finely chopped potatoes to the boiling broth.

In a skillet, melt the butter, add a spoonful of flour, pour in a little broth, and stir to prevent lumps from forming.

When the potatoes are almost ready, add the sautéed vegetables and the flour fried in butter to the pot.

Cut the fish fillet into fairly large pieces and add to the soup.

After 3-5 minutes, slowly pour in the cream, add finely chopped dill, bring to a boil, stir, and remove from heat.
