Description
To prepare Finnish fish soup "Kalakeitto," you need any fish with white, preferably boneless fillet, such as whitefish, cod, or flounder. The broth is made by boiling fish heads, fins, or bones. Then add potatoes and fish fillet, and finally pour in milk, which must be thickened with flour. Finnish cuisine uses a modest set of seasonings, typically including only pepper, onion, and sometimes parsley or dill. However, there is also a festive version of this dish—Lohikeitto—where salmon is used and milk is replaced with cream. In any case, I highly recommend trying this wonderful Finnish soup. Fish soup and milk may seem incompatible at first, but you'll quickly get used to it! The result is a new and interesting flavor, a great addition to your everyday menu. Serve the soup hot.

Prepare all the ingredients.

To prepare fish soup, you need to make a rich and aromatic broth. If you are using a whole fish, gut it, clean if necessary, and rinse. Cut off the head, tail, and fins. Pour water into a pot, add salt, bay leaf, whole peppercorns, one onion with a layer of peel, and sliced carrots.

Place the pot over heat and, after it comes to a boil, simmer over low heat until the fish is cooked. Meanwhile, prepare the remaining ingredients. Cut the potatoes into cubes.

Cut the onion into cubes or slices.

Cut the fish into small pieces.

The broth is ready. Strain it.

Return the broth back to the saucepan.

Bring the broth to a boil and add potatoes, onions, and sliced fish. Cook from the moment it starts boiling until all ingredients are done. Meanwhile, mix the flour with milk until smooth. Add black ground pepper to taste.

Pour the milk into the soup and heat over low heat. Add fresh herbs at the end if desired.

It is customary to consume ready Finnish fish soup "Kalakeitto" only after 24 hours of preparation, allowing it to steep. I served it immediately and didn't regret it. The soup turned out tender, not greasy, and very delicious!
