
Filipino Arroz Caldo
Description
Hearty and aromatic soup. Filipinos say about this soup: "It's as if it hugs you from the inside." Delicious, filling, and tender. Give it a try! This soup is more like a spicy rice porridge with meat and a generous amount of thick sauce. Serve with fresh herbs and sour cream.

Chop the onion and garlic, and slice the ginger into pieces.

In a heavy-bottomed pot, heat the oil and sauté the onion and garlic until translucent.

Place the halved chicken thighs on top and fry until golden brown. Remove the chicken thighs to a plate and add the washed and dried rice to the onions. Fry for 3-4 minutes, stirring.

Pour hot water into the pot, return the drumsticks, and bring to a boil.

Reduce the heat and cook for about an hour, until the chicken is cooked through and the rice is tender. Stir occasionally to prevent the rice from burning.

Remove the chicken, take the meat off the bones, and shred it into pieces. Return the chicken to the soup. Season with salt and pepper to taste, mix well, and let it stand for about 5 minutes.

Meanwhile, chop and sauté the remaining garlic in oil until browned. Drain on paper towels to remove excess oil.

Serve arroz caldo hot, topped with a boiled egg, generously sprinkled with crispy fried garlic, chopped green onions and cilantro, and drizzled with lemon juice and fish sauce to taste.
