
Bean soup with homemade noodles
Description
The soup is simple and quick to prepare. I really liked this soup recipe. It turns out very filling and nutritious. I recommend making the noodles yourself, but if you don't have time or don't know how, you can use store-bought ones (and they don't necessarily have to be noodles). For a more interesting aroma and taste, I add smoked sausages and ham. The soup is ready to serve.

1. I have several varieties of beans. I soaked them in advance in cold water overnight, then boiled them in salted water.

2. Peel and wash the carrot, wash the leek, slice everything thinly into angled rounds.

3. Peel and wash the potatoes, then cut them into small cubes. Add the beans, potatoes, carrots, and leek to a pot, pour in water, and bring to a boil.

4. Cut the sausage and ham into small pieces and add to the vegetables, cook for 15 minutes.

5. I wash the herbs, peel the garlic, chop everything finely, and add it to the pot with the other ingredients.

6. Bring the contents of the pot to a boil, season with salt to taste, and add spices (ground red and black pepper). Turn off the heat and cover with a lid.

7. For the noodles: I put flour into a bowl, make a depression in the center, break in the eggs, gradually add water, and knead the dough.

8. Roll out the resulting dough thinly using a rolling pin.

9. Cut the prepared dough into small strips and let them dry slightly.

10. In a separate saucepan, I pour water and add salt to taste. Bring to a boil, then add the noodles.
