
Double pike soup with millet
Description
A hearty first course. For preparing the soup, millet is used and potatoes are not added. The onion imparts its flavor and aroma during the broth cooking stage, making it a great option if you dislike boiled onions. Also, there's no need to spend much time preparing small fish—just remove the gills and innards. The scales are left on, as the fish is only used for making the broth and not consumed afterward. Millet has a slightly bitter taste, so to remove it, be sure to soak the millet in hot water and thoroughly rinse it in warm water.

Prepare all the necessary ingredients for making double pike soup with millet. If necessary, peel and wash the vegetables.

Inspect the millet for impurities, pour it into a saucepan and cover with hot water. Let the millet soak for 15 minutes, then rinse thoroughly and drain in a colander to remove all the water.

Clean the river fish, preferably small-sized, by removing the innards, gills, and wash thoroughly. For pike, cut off the head, remove the gills and tail, and cut the rest into pieces. Place the river fish, along with the pike head and tail (if available), into a pot.

Pour cold water over the fish, add the sliced onion, one carrot, and celery cut into pieces.

Place the pot with fish and vegetables over medium heat and bring to a boil. Reduce the heat and simmer for 30 minutes, skimming off the foam. Remove the pot from the heat and strain the broth. The cooked fish and vegetables will no longer be needed.

Bring the broth to a boil, then add the rinsed millet.

Add the pike steaks.

Cut the carrots into rounds or half-rings and add them to the pot with the fish soup.

Simmer the fish soup over low heat for 15 minutes after boiling, removing the foam and stirring gently 2-3 times. Add the bay leaf, adjust the salt to taste, and cook for another 5 minutes. Remove the ready soup from heat, sprinkle with chopped fresh herbs, and serve.
