
Don-style solyanka
Description
The recipe won't take much time. The solyanka turns out rich, piquant, and tangy-sweet in flavor. If desired, add a slice of lemon or lime to the solyanka and serve with sour cream. The soup is ready to serve.

Prepare all the necessary ingredients for Don-style solyanka.

Clean the fish from scales, innards, and fins. Remove the gills from the sturgeon and salmon heads, and if desired, the eyes; cut the heads in half. Place the salmon, heads, and tail in a pot, pour in cold water, and set over medium heat. Simmer for 45 minutes, skimming off the foam.

Strain the broth into a clean saucepan, and place the fish on a plate to let it cool completely.

In a skillet, pour vegetable and butter, heat. Add parsley root cut into strips, grated carrot, and chopped onion. Fry over medium heat for 5 minutes.

Cut the pickled cucumbers into thin strips and add to the sautéed vegetables.

Place the tomato paste in a frying pan and sauté over medium heat, stirring, for 10 minutes.

Pick over the cooled fish, removing bones and skin. Bring the broth to a boil, then add the sautéed vegetables and fish. Bring to a boil again and simmer for 5 minutes.

Add the sliced olives to the solyanka.

Slice the tomatoes into circles and add them to the solyanka. Cook the solyanka for another 10 minutes over low heat.

Season the Don-style solyanka to taste with salt and, if needed, sugar. Add finely chopped fresh herbs, let it sit for 10 minutes, remove the bay leaves, and serve.
