
Quick Diet Fish Soup

Perfect for lunch. Preparing any soup usually takes some time. However, this quick and healthy fish soup recipe comes together very fast. Just 40 minutes—and you'll have a delicious, hearty yet light, and above all, nutritious soup on your table! Instead of hake, you can use any other sea fish or fillet. Serve with fresh herbs and sour cream.

1. Any sea fish cooks quite quickly. Today I chose a small-sized hake. Bring the broth to a boil, skim off the foam, reduce the heat, and simmer the fish over low heat for 25 minutes. Salt and add spices to taste.

2. I don't make a roux for fish soup. Chop the onion and carrots.

3. Cut the potatoes into small cubes. When the fish has simmered for a while, add the potatoes and vegetables.

4. Rinse the rice (you can use any grain of your choice) and add it when the potatoes start boiling.

5. When the broth comes to a boil, remove the fish and continue cooking until the rice and potatoes are done. Instead of rice, you can use millet, which is also an excellent choice.

6. I added the herbs at the very end. I used parsley, dill, and green onion.

7. Serve the quick diet fish soup hot. Before serving, you can garnish it with fresh herbs.
