
Diet Chicken Noodle Soup
Description
Perfect for lunch. Children especially like this light soup—they don't enjoy finding large chunks of carrot or onion in their first course. You can serve the soup with low-fat sour cream, if it's not restricted by the diet. The soup is quick to prepare, but the cooking time for the vermicelli should be checked on the product's packaging. The soup is ready to serve.

Prepare the listed ingredients. Purchase lean parts of chicken: wings, offal, necks, and so on. You can use ready-made chicken broth.

Rinse the chicken pieces and place them in a pot. Peel the potatoes, rinse them in water, and cut into medium cubes, adding them to the pot. Pour in hot water, add salt and bay leaves. Place the pot on the stove and bring the contents to a boil, skimming off the foam and fat that forms. Simmer for 15 minutes.

Peel the carrots and onion, rinse them, grate the carrots on a fine grater, and finely dice the onion.

Add both slices to the pot.

Add the vermicelli and cook for 5-6 minutes.

Rinse fresh dill, chop finely, and add to the soup. Boil for another 1-2 minutes.
