
Dietary Mushroom Soup
Description
The recipe won't take much time. Prepare all the vegetables and mushrooms—rinse and chop them. Grate the processed cheese; for easier handling, you can freeze it first. Then, in the pot where you'll cook the soup, sauté the onion, carrot, and mushrooms. Next, add the potatoes and water. Finally, add the spices and the grated processed cheese. Pour into bowls and serve.

Dice the onion.

Slice mushrooms arbitrarily.

Grate the carrot on a coarse grater.

Pour vegetable oil into a heavy-bottomed pot. Add onion. Sauté it directly in the pot.

Add the carrots. Sauté them with the onion.

Add the sliced mushrooms. Mix well. Simmer everything together uncovered for about 5 minutes.

Add the peeled and diced potatoes. Mix. Pour in water and bring to a boil.

When the potatoes are almost ready, add the grated processed cheese to the boiling soup. Stir well and let it simmer for 5 minutes. Add salt and spices. If the vegetables are done, you can turn off the heat.
