
Dietary Borscht without Sautéed Vegetables
Description
The recipe won't take much time. I strongly advise against replacing tomato juice with tomato paste or, especially, ketchup. Tomato juice gives a beautiful color, pleasant consistency, and tastes just like fresh tomatoes, whereas tomato paste leaves a distinct aftertaste of added spices and seasonings, which negatively affects the borscht's flavor. During cooking, I don't add salt or pepper—everyone seasons their own bowl to taste. Serve with fresh herbs and sour cream.

Step 1

In a large pot, cook the meat. Beef can be boiled whole or cut into large pieces to keep it juicy. Use a skimmer to remove the foam forming on the broth. In the middle of the cooking process, add a whole peeled onion and parsnip to the water. When only 1/3 of the water remains in the pot, turn off the heat. Do not drain the broth.

Meanwhile, in another pot, you can boil the beetroot without peeling off the skin. If you have fresh beans, set up another pot and cook them. I use canned beans, so there's no need to cook them.

We cut the vegetables. Peel the potatoes and carrots and chop them into large pieces. Shred the cabbage into coarse strips. Remove the meat from the broth and add the chopped vegetables to it.

We shred the cooled beef into fibers or cut it into small pieces. I prefer to shred it into fibers. Add the minced meat to the broth with vegetables.

Peel the boiled beet and cut it into thin strips or grate it on a coarse grater. I usually choose the second option to save time. Add the beet and beans to the pot with the other ingredients, then pour in the tomato juice. Place the pot over low heat. Season with salt and pepper if needed. After it comes to a boil, cook for another 30 minutes.

At the end of cooking, remove the onion and parsnip from the pot. Serve our low-calorie borscht with fresh herbs or low-fat sour cream. I like adding some minced garlic to the bowl before serving. For those who enjoy a bit of tanginess, a few drops of lemon juice can be added.
