1. Pour water into a saucepan and add peeled carrots, celery root, parsley sprigs, and any other herbs. You can also add a peeled onion and a bay leaf to the broth.

2. While the broth is cooking, you can start preparing the vegetables. Even a recipe for dietary borscht cannot do without potatoes. They need to be peeled, thoroughly washed, and cut into strips or cubes.

3. Peel the second carrot and cut into strips or grate on a medium grater.

4. Beets should be prepared in exactly the same way. Without them, the dietary borscht made at home will be too light and won't achieve the necessary rich color.

5. Of course, the main ingredient of borscht is cabbage. It needs to be finely shredded.

6. When the broth has finished simmering, carefully remove the vegetables from it. Then add potatoes, carrots, and beets to the pot. When the broth comes to a boil, cook for about 10 minutes over medium heat. Then add cabbage, and season with salt and pepper to taste.

7. That's the entire process of making a diet borscht. When the vegetables become soft, you can add a pinch of your favorite dried herbs or fresh greens. Cover with a lid and let the borscht steep for at least half an hour. Then it's ready to serve. If desired, you can accompany this borscht with low-calorie yogurt, for example.
