1. First, boil the chicken breast until cooked. You can use any other parts of the chicken or substitute with vegetable broth. Rinse the chicken and place it into a pot. Pour water into the pot and set it on the stove. Once it comes to a boil, discard the broth with the scum, rinse the chicken, and return it to the pot. Add onion, peppercorns, and bay leaf. After about 40 minutes, remove the chicken breast and let it cool.

2. Peel the celery and carrots, then grate them on a coarse grater. Since celery skin is tough, slice off about 5 millimeters in layers. Add the root vegetables to the boiling broth and simmer for about three minutes over low heat.

3. Cut the cabbage for shchi. Use only fresh cabbage. Put it into the pot, add rinsed rice, and wait for it to boil.

4. While the cabbage is boiling, peel and chop the potatoes. Cut the potatoes into random pieces. When the cabbage comes to a boil, add the meat and potatoes.
