
Dietary Solianka
Description
Perfect for lunch. Soljanka is a beloved and easy-to-make dish. Drop potatoes into boiling water, and while they cook, sauté onions and carrots in a skillet for a few minutes. Then add diced pickles and rinsed sauerkraut to the skillet. Pour in a little broth from the pot and simmer for 10 minutes. At the end, add tomato paste, mix well, and after a minute transfer the skillet contents to the pot. Also add bay leaf, season with salt and pepper, cover with a lid, and cook for another 10 minutes. When serving, add a few olives to each portion. Serve with fresh herbs and sour cream.

Cut the potatoes into pieces and place them in boiling water.

Chop the onion and carrot and sauté them in a pan for 3-4 minutes in vegetable oil.

Then add the diced cucumbers and rinsed sauerkraut to the skillet. Pour in a little broth from the pot and simmer for 10 minutes.

Then stir in chopped herbs, remove from heat. When serving, add several large olives to each portion.
