
Dietary herring under a fur coat
Description
Minimum effort — excellent result. The main secret of making a diet version of "Herring under a Fur Coat" salad is, of course, eliminating mayonnaise, which significantly increases the dish's calorie content. Instead, mayonnaise can easily be replaced with sour cream mixed with mustard. The amount of mustard depends on your taste preferences. The salad can be served immediately.

So, first of all, wash the vegetables, place them in a pot (no need to peel them beforehand!) and pour water over them.

Place over heat and cook until done.

Place the eggs in a separate saucepan and boil them hard.

While the vegetables are boiling, you can clean the herring, remove the bones, and cut the fillet into small cubes.

Place the fish on the bottom of a baking dish or serving plate.

Add a little of the previously prepared sauce on top.

Peel the onion, chop finely, and place on top.

Cool the cooked vegetables, peel and chop them (you can grate all the vegetables or just the beets and carrots, for example, if desired).

Place the potatoes on top of the onion, sprinkle lightly with salt and pepper, and brush with sauce.

Next comes the carrot — and again, season to taste with sauce. I don't recommend salting each layer, otherwise this simple recipe for diet herring under a fur coat won't be quite so diet-friendly.

Separate the chilled and peeled eggs into whites and yolks. Grate the whites and place them on top of the carrots.

Now it's time for the beetroot, which can be slightly salted and generously coated with the sauce.

Garnish with grated yolks on top and, if desired, herbs to taste.

Now the diet version of herring under a fur coat should chill in the refrigerator for at least 2–3 hours to allow it to marinate properly.
