
Country salad
Description
Minimum effort — excellent result. To prepare the salad, boil potatoes in their skins until tender. Small potatoes take 30–35 minutes, larger ones 45–50 minutes. Let them cool completely, then peel. I recommend marinating the onion in mushroom brine—it's delicious! Use any fresh herbs you have on hand; I use dill and parsley. This amount of salad is enough for a large family. You can serve it immediately.

Prepare the ingredients: boiled potatoes, cucumbers, mushrooms, onions. It is advisable to use natural unrefined oil; for salads, fried oil is preferable as it is more aromatic and tastier than steamed oil.

Peel the onion and slice it into half-rings. Drain the brine from the mushrooms, then leave the onion to marinate in the brine for 10–15 minutes.

Peel the potatoes and cut them into large pieces.

Coarsely chop the pickled cucumbers and add to the potatoes.

Drain the brine from the onions and add it to the salad.

Add the pickled mushrooms; if they are large, slice them.

Add salt, ground black pepper, and vegetable oil.
