
Country-style winter cabbage soup
Description
The recipe won't take much time. These shchi are prepared according to a classic recipe. The innovation: potatoes are added whole, then mashed with a fork and returned to the soup. In my opinion, it would be great to add dried mushrooms to this soup, preferably porcini! Overall, the shchi turn out delicious and aromatic. Serve with fresh herbs and sour cream.

Wash the meat, place it in a pot, and cover with water.

Add bay leaf and peppercorns and cook for 1.5 hours. Then remove the meat from the pot and slice it or separate it from the bones. We will return it to the soup at the end.

Cut the onion into cubes, grate the carrot on a grater.

Sauté the carrots and onions in lard for about 7 minutes.

Add the tomato sauce (I used frozen) and sauté for another 5 minutes.

Put sauerkraut in the broth.

Then the whole peeled potatoes.

Cook until the potatoes are done. Then remove them and mash. Return to the broth.

Add the sauté, meat, and chopped garlic clove.

After 5 minutes, remove from heat. Let cool and place in the freezer for 1–2 days. Serve hot with sour cream!
