Prepare all the ingredients.

Peel the potatoes. Large potatoes can be halved, small ones leave whole. Bring water to a boil and add the potatoes. Cook for 10 minutes.

While the potatoes are boiling, prepare the vegetable sauté. Heat vegetable oil in a frying pan. Add onion cut into half-rings and fry until soft.

Cut the carrots into thin strips and add them to the frying pan.

Next, add the beet, also cut into thin strips.

Cut the bell pepper into thin slices and divide into two parts. Add one half to the frying pan.

Add the tomato paste and simmer for 1 minute. Then pour in the crushed tomatoes, bring to a boil and simmer for a couple of minutes.

Shred the cabbage into short, thin strips. Add the cabbage and the second half of the bell pepper. Cook the soup for 1-2 minutes.
