
Gypsy borscht
Description
The recipe won't take much time. This borscht will require more time, but believe me, it's worth it. The sautéed vegetables give the soup a special flavor. If you don't eat pork fat or consider it too high in calories, use regular vegetable oil. There's no need for sugar, as the borscht will be much milder since it contains no vinegar. Serve with fresh herbs and sour cream.

Prepare all the necessary ingredients for making gypsy borscht.

Wash the pork and pat it dry. Cut it across the grain into pieces. Heat a frying pan over medium heat, place the pork in the pan fat-side down, and fry until a golden crust forms, stirring occasionally. This will take about 7 minutes.

Cut the tomato into pieces and add to the pan with the meat. Cover with a lid and simmer over low heat for 25 minutes.

Heat another pan over medium heat and add the fat cut into small cubes. Render the fat until cracklings form.

Peel the potatoes and cut them into thin strips. Remove the cracklings from the skillet, add the potatoes and fry until golden brown. Transfer the potatoes to a pot, where borscht will be cooked later.

Shred the cabbage, place it in the pan after the potatoes, and fry for 5 minutes, then transfer to the pot with the potatoes.

Chop the onion, peel and slice the carrot into thin strips. Add to the pan after the cabbage and sauté for 5 minutes. Add them to the pot with the sautéed vegetables.

Peel the beetroot and grate it. Add to the pan after the vegetables and sauté for 7 minutes over medium heat.

Add the beet to the pot with the sautéed vegetables and mix.

Cover the pot with a lid and place over low heat. Simmer the vegetables for 15 minutes, stirring occasionally.

Add the stewed pork to the pot and mix.

Pour in the water and bring to a boil, then simmer over low heat until the vegetables are cooked, about 15–30 minutes. Season with salt and pepper, add chopped herbs. Bring to a boil again, then remove from heat. Let stand for 15 minutes before serving.
