Step 4

4. While the potatoes are boiling, prepare the garlic. We will add three types of garlic to this soup: fried, fresh, and fresh again at the very end of cooking. Fry 5 garlic cloves in a pan with olive oil, previously cutting the cloves into several pieces. Slice 2 garlic cloves, set aside. The last clove will be used at the end.

Step 5

5. When the potatoes are cooked, add the fried and fresh garlic to the soup. Simmer for another 5 minutes.

Step 6

6. While the soup is finishing cooking, prepare the bread. Cut off the tops and remove the crumb with a spoon. If the bread is too soft, dry it in the oven for about 5 minutes at maximum temperature.

Step 7

7. Now remove the soup from the heat. Blend it with a blender until smooth. While blending, gradually pour in the cream, then season with salt and pepper. Return the soup to the stove and bring it to a boil. Once the soup boils, turn off the heat and squeeze the last garlic clove through a garlic press. Mix well.
